Hearty, comforting soups for any day of the week and thrown together in under 30 minutes; make double and freeze for a rainy day when you don’t feel like cooking. Soups are also such a brilliant way of reducing food waste in your home, making the most of sad looking veg or herbs that can be whizzed up in no time to something special for everyone at home.

Using store cupboard staples and spinach from the freezer, this Seville-inspired stew from ‘Eat Happy’ comes together in under 20 minutes and is a hit with everyone.
