Lovely Meals Lately + Our Thanksgiving Menu

Heya, friends!

The countdown is on…less than two weeks until I head to the hospital and 4-6 weeks until baby boy is here.

I’m balancing soaking up this sweet time with Jeff, getting the house ready, working ahead so I can take a maternity leave, and planning how I’ll spend my time once I’m on bedrest.⁠ I’m also thinking about how to make the room more cozy (diffuser, plants, cozy blankets and slippers, picture frames) so it feels like home since I can’t have any visitors.

I’m also enjoying eating all the yummy food at home while I can!

Thanksgiving Menu

Jeff and I decided to stay in Columbus this year given Covid. We’re super bummed to not be seeing our families in Cleveland and Younstown, but we know it’s the safest decision for everyone. And even though it’s just us two, you better believe I’m still making a feast!

Jeff made this brine for a turkey last night. It’s our first time ever making one! I’ll be making my Spinach Mushroom Stuffing with local sourdough, Gravy, Cranberry Orange Sauce, Mashed Potatoes, this Brussels salad, and Pumpkin Pie.

Lovely Meals and Snacks Lately

The best vegetable soup with my go-to tuna salad with kraut on a whole wheat english muffin with lettuce and avocado. Soup and sandwiches are all I want these days!

I’ve been making us big green smoothies for snacks with frozen banana, pineapple and zucchini, peanut butter, avocado, spinach, and coconut water. So refreshing!

Salmon roulade with turmeric black eyed pea rice…my fave Alchemy Meal Prep meal! Paired with a leftover pizza app (YUM) and salad with apple cider vinegar dressing.

Yummy monster cookies! Baking is therapy these days, am I right? I added 1/3 cup shredded coconut. My favorite peanut butter oatmeal cookie recipe is still this Oh She Glows one!

Honeycrisp apples and sunflower seed butter…divine.

DIY trail mix! Jeff likes to take this to work. I used roasted almonds, walnuts, pepitas, tart cherries, and coconut.

Mashed potatoes and cauliflower topped with this delish gravy, stuffing balls (love these), green beans, and cranberry sauce!

Reunited with chocolate covered pretzels…my obsession. These are most definitely coming to the hospital with me.

A spin on my cream of mushroom and wild rice soup (cooked on the stove with lots of carrots, kale, brown rice, no mushrooms) with avocado toast on Dan the Baker sesame sourdough. I layered the toast with kraut and micro greens!

A very necessary Saturday sticky bun snack on the way to picking up baby stuff from Ikea.

Practicing apple crumb pie!!

Trader Joe’s brown rice penne with steamed cauliflower and bell peppers, vodka sauce, parmesan, and fresh parsley. Dinners are very simple these days!

Aaaaand here’s a fun Trader Joe’s haul pic. Any other mamas to be struggling with third trimester water aversion? I dealt with it early on but it’s back with a vengeance. OJ to the rescue!
