If you’re a long term blog reader, you know I used to be energy ball obsessed. There are countless ball recipes on the site… some of which could use some updated copy and pictures! This is one of those recipes. I have to laugh when I read old posts… I was basically just updating you on my life and giving no context to the recipe. I love how much blogging has shifted and changed through the years and really enjoy writing for YOU. 

A few years ago, blogs were just updates on life but then we (bloggers) realized we could be more helpful so started adding valuable content… what a novel concept! So as I develop recipes and write blogs, I’m always thinking about what you might need to know. Let’s dive into this festive recipe!

Blackstrap Molasses 101

Besides giving these energy balls a delicious gingerbread flavor, the blackstrap molasses really packs a nutritional punch! It’s considered a superfood that’s high in important vitamins and minerals. It helps with bone health thanks to the magnesium and calcium and blood health thanks to the iron and potassium. (Source)

How to Make Gingerbread Energy Balls – Just 3 Steps!

STEP 1: Add dates and cashews to a food processor or high-powered blender and process on high until everything is broken into pea-sized bits. 

STEP 2: Add in molasses and spices and process until everything is mixed and hold together when formed into a ball – usually takes about 3-5 minutes of processing.

STEP 3: Stir in the chocolate chips and roll the mixture into 15 small balls. 

Are your energy balls not sticking together?

Your dates might not be sticky enough. If not, soak them in warm water for 20 minutes before using. If you didn’t realize this until you’ve mixed all the ingredients, add a little bit of water to the mixture to help rehydrate the dates. 

How to Store Energy Balls

Store in an airtight container in the refrigerator for several weeks. You can also freeze to store longer. Just remove from the freezer 30 minutes before eating.

Ingredients

  • 1 cup raw cashews
  • 1 cup medjool dates, pitted*
  • 1 tbsp blackstrap molasses
  • 1 1/2 tsp dried ginger
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp sea salt
  • 3 tbsp chocolate chips [mini chocolate chips are ideal]
  1. Add cashews and dates to a food processor or very high-powered blender and process on high.
  2. Once broken up into pea-sized bits, add in molasses and spices but not the chocolate chips.
  3. Process until everything is completely broken up and holds together when formed into a ball. This should take around 3-5 minutes.
  4. Stir in chocolate chips (do not process them in).**
  5. Roll into 15 small balls and place on a plate or in a container in the freezer for 15 minutes.
  6. Remove from freezer and store in the fridge for several weeks.

*Make sure they are sticky. If not, soak in hot water for 20 minutes before using.
**If you prefer to drizzle with chocolate rather than stir it in, melt chocolate in microwave for 30 seconds and then add to a small-tip piping bag or ziploc bag with a small hole cut in the corner. Drizzle over each ball and then place back into freezer for another 5 minutes to harden.
