Lavender Simple Syrup [And How to Use It!]

I love lavender. Lavender is a pretty popular scent but my love for lavender goes beyond potpourri. I could eat or drink lavender every single day. I know that not everyone is into the taste of lavender but for me, it’s the ultimate flavor! C knows this and thankfully has indulged me a few too many times as I’ve dragged him to lavender farms and had bushels of lavender drying in our garage.

I’ve collected culinary lavender from around the world but two of my favorite lavender farms are Los Poblanos in New Mexico and Wanaka Lavender Farm in New Zealand. Taking in the scent of the flowers, trying out all the flavors of different lavender recipes and buying way too much lavender honey is kind of my jam.

You could say I was on cloud 9 when I discovered the house we were living at last year had a whole row of lavender growing. My only regret is not picking and drying more! Thankfully I still have a stock and it’s been a perfect use for this lavender simple syrup and in my favorite lavender coffee and cocktail recipes. Buckle up because I have a lavender flavor bomb coming your way!

What is Simple Syrup?

It’s pretty self-explanatory but if you’ve never heard of simple syrup the name says it all: it’s a very simple sweet syrup. Traditionally simple syrup is used in cocktails but you can also add it to so many other things. I’m personally a fan of adding it to my lattes and have included a recipe for lavender coffee below. Making simple syrup is, you guessed it, very simple. However I’m breaking down all the steps below just to make it easier for you.

What You Need To Make Lavender Simple Syrup

To make simple syrup the recipe is super simple: It’s just a 1:1 water to sweetener ratio. In this case we’re using 1/2 cup of water with 1/2 cup of raw honey. You can also swap in any other type of sugar. You’ll also add in your dried lavender to infuse into the simple syrup. Here’s what you need:

  • Water
  • Raw Honey [or other sweetener]
  • Dried Lavender

How to Make Lavender Simple Syrup

STEP 1: In a small saucepan combine water, honey and lavender buds and bring to a boil. Once boiling lower heat to a simmer for 15 minutes. Remove from heat and allow to cool to room temperature (about 1 hour) to let flavors infuse.

STEP 2: Strain out lavender from syrup using a small colander or cheesecloth.

STEP 3: Store lavender simple syrup in a sealed jar in the fridge for up to 1 month.

How to Use Lavender Simple Syrup

This lavender simple syrup is great in any recipe you want to add a sweet lavender flavor to! It’s especially good in coffee or cocktails but also makes a great addition to lemonade, smoothies and even your morning oatmeal! Here are two of my favorite ways to use this lavender simple syrup.

Lavender Coffee Latte Recipe

For the lavender latte you’ll combine 1-2 shots of espresso with 1 tbsp of lavender simple syrup. Top with 1 cup of steamed milk (regular, almond or oat all work great). For a lavender twist on a regular coffee you can brew your coffee as desired and mix in 1 tbsp of lavender simple syrup + milk, if desired.

Lavender-infused Cocktail Recipe

You can replace any cocktail recipe using simple syrup with this lavender simple syrup. Here are two variations you might enjoy:

Lavender Martini: Combine 1 ounce vodka, 1/2 ounce lemon juice and 1/2 ounce of lavender simple syrup in a cocktail shaker with ice.

Lavender Margarita: Combine 2 ounces tequila, 1 ounce triple sec, 1 ounce lime juice,1/2 ounce lavender simple syrup and pour over ice.

Lavender Tom Collins: Combine 1 ounce gin, 1/2 ounce lemon juice, 1/2 ounce of lavender simple syrup and 2 ounces of sparking water in a cocktail shaker with ice.

Some Tips*

Where do you get dried lavender?

If you’re able to grow and dry your own lavender that’s always a plus but if not, it’s fairly easy to find online or in most health food stores. Here are a few links to dried lavender you can purchase online: Mountain Rose Herbs, Los Poblanos, Amazon.

Reminder – be sure to buy culinary lavender as non-culinary lavender is often sprayed with pesticides and other chemicals.

Can you use different sugars?

You can use any other wet or dry sweetener in place of honey. I prefer using raw honey because it’s unrefined but white sugar, brown sugar, maple syrup, agave or coconut sugar will work. Just replace with the exact same 1:1 ratio of water to sugar.

Can you swap in different herbs?

Yes! I’ve made this with chamomile but you can also sub in rosemary or any other dried herb.

Can you double or triple this recipe?

Yes. You can easily double or triple this lavender simple syrup recipe. Just stick to the basic 1:1 water to sugar ratio and adjust your lavender or other herbs to preference.

How to store your lavender simple syrup

Store your lavender simple syrup in the refrigerator for up to 1 month in a sealed jar. You can also freeze and it will keep for several months. It may not freeze over entirely because of the sugar/water ratio. You’ll need to pull it out of the freezer about an hour before use.

Why Isn’t My Lavender Simple Syrup Purple?

I know – wouldn’t it be fun if this lavender simple syrup turned out purple? Unfortunately unless you use food coloring it simply won’t have that purple hue. What you will get is a nice amber hue from the sugars in the honey (or other sweetener). The flavor will be just as good though.
